Make Chicken & Mushroom Mock Risotto with Minute Rice

I love cooking flavourful dishes for supper, but I don’t always have the time to cook something that requires a lot of ingredients and time. Between the kids homework, dance class, chores, reading, and all of the other things that come with normal family life during the precious hours between school and bedtime, I need to stick with quick and easy suppers. The other day, I had the desire to make some decadent and creamy mushroom risotto. If you’ve ever tried risotto, you’ll know how comforting and delicious this rice dish tastes. So yummy! With the help of Minute Rice and my taste buds, I was able to come up with a method to make a mock risotto that tastes just as creamy as the real thing but takes much less time to make. Let me show you how easy it is to make this chicken and mushroom mock risotto!
One thing I love about this dish is that it’s a one-pan supper. The addition of chicken gives it a punch of protein, and the mushrooms and onions are veggies that my kids are happy to eat.
Rather than stirring this risotto continually like you would with traditional risotto, I’ve added a secret ingredient to give this dish a creamy taste without the stirring.
With only some Minute Rice and five additional ingredients, this creamy mushroom chicken mock risotto takes hardly any time to make. To save time, I batch cook my chicken breast at the beginning of the week, divide it and refrigerate it to use in easy suppers just like this.
Another time saving idea? Keep a container of chopped onion and garlic in the fridge for your dinner making throughout the week. I think a little chopped onion and garlic goes well with almost anything!
To make this simple mock risotto, start by adding 1/4 cup of finely chopped onion and garlic to a pan on medium heat with a little olive oil. Let it sizzle and stir everything gently until the onions are clear. Mmmmm! This is my favourite part of cooking this dish.
Next, throw in a cup of fresh sliced mushrooms. Stir everything around until the mushrooms are golden.
Next, stir in a 2 cups of Minute Rice® Premium Instant Long Grain White Rice. Stirring it with the sauteed veggies and olive oil gives it a slightly nutty flavour before adding in the liquid.
Next, pour in 4 cups of chicken broth.
Mix all of this fragrant goodness up until it becomes thick and smells delicious. Turn down your stove’s heat to low.
Now it’s time for my secret ingredient! Add in 1/4 cup of cream cheese and some chopped, cooked chicken breast to the rice mixture.
Stir everything gently until the cream cheese has been incorporated into the mixture and the chicken is warm.
Serve this delicious chicken and mushroom mock risotto hot with a sprinkling of green onions or parsley.
This comforting dish will make you want to cook it weekly! Plus, it’s so easy and quick that you won’t mind adding it to your regular dinner rotation.

- 1 Tbsp olive oil
- 1/4 cup finely chopped onion
- 2 finely chopped cloves of garlic
- 1 cup sliced fresh mushroom
- 2 cups Minute Rice® Premium Instant Long Grain White Rice
- 4 cups chicken broth
- 1/4 cup cream cheese
- 1 cup chopped cooked chicken breast
- Heat the olive oil in a pan on the stove on a medium heat setting. Add the onion and garlic and sautee until the onion is clear.
- Stir in the mushrooms, and sautee until the mushrooms are golden brown.
- Add rice, and stir for about 2 minutes.
- Slowly pour in the chicken broth, and stir the entire mixture until it’s thick – about 5 minutes.
- Turn the heat down to a low setting and stir in the cream cheese and cooked chicken breast. Cook for about 2 more minutes or until the cream cheese is incorporated and the chicken is warm.
- Serve with a sprinkling of chopped green onion or parsley.
