Make Easy Waffles Eggs Benedict

One of my favourite decadent-feeling breakfasts to make is eggs benedict. I admit I cheat a little and make the hollandaise sauce in a very non-traditional way, but I promise it tastes amazing!

A delicious, homemade brunch for two with a beautiful but simple table setting is a lovely way to honour Mom this year. You create this brunch for yourself, for your mom, OR show this to your hubby and cross your fingers that he gets the hint!

Now onto my eggs benedict recipe! You can make this with english muffins or with waffles for a fun twist like I’ve done here. Find my favourite waffle recipe right here, and make them before you make the rest. I keep mine in my oven on the “warm” setting while I prepare the rest of the eggs benedict.
- 1 large, round waffle divided into 4 pieces
- 2 tbsp butter
- 2 tbsp flour
- 1 cup water
- 2 tbsp fresh squeezed lemon juice
- 2 egg yolks
- salt & pepper to taste
- 4 eggs
- 4 slices back bacon
- fresh or dried parsley flakes
- To make the easy hollandaise sauce, melt the butter in a sauce pan on medium heat and add the flour. Whisk.
- Continue to whisk the mixture while adding 1 cup of water. Stir until the sauce thickens.
- Add the lemon juice and two egg yolks, whisking constantly. Cook for 2 minutes, and then add salt & pepper to taste.
- Remove from heat.
- Poach the eggs.
- Fry the bacon in a skillet.
- To assemble the eggs benedict, place the waffle pieces on plates. Layer one piece of bacon on each waffle piece, then a poached egg. Finish with a generous drizzle of hollandaise sauce and sprinkle with parsley if desired.
