Snickerdoodles get a seasonal spin with the addition of homemade pumpkin spice mix right in the batter! These cookies are chewy, flavourful, and the perfect Fall cookie recipe. They also freeze well for a treat to enjoy later, or to prep for a family gathering.
There’s nothing quite like snickerdoodles – not only are they fun to say (my girls think the word’s hilarious!), but they’re delicious to eat. The crunchy texture of the cinnamon-sugar coating, the soft and chewy center, the buttery taste… YUM! These delectable, cakey cookies are MILES better than any store-bought cookie, but they’re easy to make.
This post first appeared in October 2021 and has since been updated.
This project is part of the Seasonal Simplicity blog hop hosted by The Happy Housie, so after you read my post make sure to see all of the other delicious Fall recipes linked at the bottom!
Recently, my mom had to bake dozens of cookies for a wedding, and she reported that the most popular ones were the snickerdoodles. She also reported that she tried using lard in her cookies instead of butter, and the result was an amazingly textured cookie. I decided to give both snickerdoodles and lard a try for this recipe today!
Another update to the humble snickerdoodle? The addition of homemade pumpkin spice mix to the batter itself. It gives a bit of a spicy kick to this cookie dough so that the cookies taste a little like gingerbread, but still much milder and sweeter. This cookie is the perfect combination of Fall flavors.
Ingredients
- butter
- lard
- granulated sugar
- eggs
- vanilla extract
- all purpose flour
- cream of tartar
- baking soda
- sea salt
- DIY pumpkin pie spice mix (a mix of cinnamon, ginger, nutmeg, allspice & cloves)
- cinnamon
See the recipe card below for the quantities.
Instructions
- Pre-heat the oven to 375F.
- Next, soften the butter, and mix together the butter, lard and sugar in a bowl.
- Then, add the eggs and vanilla and mix.
- In a separate bowl, combine the flour, cream of tartar, baking soda, salt and DIY pumpkin spice mix. Pour the dry ingredients into the wet ingredients and mix.
- Now, in a small bowl, mix together the granulated sugar and cinnamon for the topping.
- Roll the cookie dough into 1 inch balls, roll each ball in the cinnamon-sugar mix, and place on a baking sheet lined with parchment paper.
- Finaly, bake the cookies for 8 minutes, remove from the oven and cool.
Substitutions
- Lard – you can use butter instead of the lard, but I find that the lard makes these taste extra chewy and fluffy
- Vanilla extract – the vanilla extract can be substituted for almond extract for a different taste
Variations
- Brown butter snickerdoodles – cook the butter at a medium low temperature in a saucepan on the stove until it’s warm and slightly browned. Then, use it in this recipe for a rich brown butter taste.
- Spicy pecan cookies – chop 1/2 cup of pecans and add them to the cookie dough before rolling the cookies out for a nutty twist.
Ready to bake? Here’s the Pumpkin Spice Snickerdoodle Fall cookies recipe! This recipe makes at least 4 dozen cookies, so it’s perfect for freezing half the cookies to save for the holiday season.
