Easy Easter Brunch Ideas

With Easter approaching, lots of us are scrambling to come up with tasty but simple menu ideas to serve our guests. One of my favourite meals to serve is breakfast or brunch, so this Spring I thought it would be fun to host a beautiful, fresh brunch to celebrate Easter. Let me show you some simple Easter table decor, as well as some easy Easter Brunch ideas!

For my party, I’m hosting an Easter / Spring themed brunch. This is a gathering of 7 people – my immediate family and my parents – so it’s not a huge crowd. I’m leaving the leaf out of our Hancock Park table this time, and my two oldest daughters can pull up a stool at the island to eat.

Here’s the simple breakfast menu:

• my easy eggs benedict (made even easier for a crowd; I’ll explain below)
• fresh fruit platter
• crispy bacon
• boiled eggs
• croissants
• orange juice

If you want to make this meal “brunchier”, you could also throw in a veggie platter, or add a steamed veg like asparagus.

To make my easy eggs benedict recipe work for the timing of a larger meal (I always find timing everything perfectly a little stressful when it comes to large dinners), I pre-toasted my english muffins and then laid them in a casserole dish. I made my easy hollandaise sauce as per usual, fried some ham and eggs, and then assembled my bennies in the casserole dish.

Then, while I cooked & prepped everything else, I simply popped the dish of eggs benedict into the lower oven in my LG range from the Brick on the “warming” setting. They stay warm and they’ll be ready to grab when everything else is ready! Easy.

For the table setting, I layered some new aqua plates I’ve purchased (I love this pattern and I want to keep collecting it) over some fringed napkins and white textured plates I had on hand.

I thought these sweet little bird’s nests were an adorable plate topper. I’ve been using them everywhere in my Spring decor.

An aqua runner and an aqua jug filled with purple flowers completes this light and Springy tablescape for our Easter brunch.

When I host get-togethers, I usually serve the food buffet style on our island, but this time I’ve decided to serve everything family style in the center of the table. I think it’s fun to have such an interesting variety of foods at everyone’s fingertips so they can easily pick and choose things as they please.
